Rapid Control Atmosphere Storage of Mango. Application of liquid nitrogen for storage of food materials

      Аннотация: Control atmosphere storage is a new technique to enhance the storage life of fruits and vegetables. Depending on the preferred storage temperature of the fruit or vegetable, the temperature is set, The gas composition in terms of concentrations of oxygen and carbon di oxide is also set. The question comes, which should be set first? From the knowledge of temperature quotient, it is known that as the temperature is lowered inhibits the deterioration of the fruit or vegetable. This tells that the temperature should be lowered first compared to fixing the gas composition. Liquid nitrogen has the capability to lower the temperature almost instantaneously. That is why rapid control atmosphere storage concept has been brought into the dissertation. Mango being a tropical fruit and susceptible to low temperature has been selected as the choice of fruit. Besides, commercial value in terms of money and market demand is also very high.
