Аннотация: As you all know, most natural compounds are found primarily in fruits and vegetables, and to the extent that our diet is based on cooked foods, an idea that arises, “does cooking of some plants affects the biological activities of natural molecules or not?" this is why we undertook to study biological changes that could undergo a naturel flavono?d after heat treatment. This book highlighted the anti-tumor effect of luteolin on glioblastoma on the one hand, and on the other hand, to see the impact of heat on this activity. However, this work showed that Luteolin has an inhibitory activity on proliferation, adhesion, migration and invasion of brain cancer cells, as well as on angiogenesis, but at the same time, this activity has been negatively influenced by heat treatment. In light of these results, it is necessary to persuade all people to consume fresh plant foods and avoid their boiling.
