India is a land of villages and 74.35% of its population lives there. Agriculture is still the main occupation of people in rural areas. Relying only on agriculture is likely to leads to problem of unemployment and underemployment on a large scale. The solution to this problem lies in making the rural economy multi-sectored. The focus of this book is on the Food Processing Industry. India is described to as a sleeping giant in the field of food processing, as it is a second largest producer of fruits and vegetables in the world, next to China. The food processing industry has the potential of changing the face of India.
